Apples,Apples Everywhere.

There is an abundance of apples this year. We have had crumbles, chutneys, jellies, tarts and raw apples. There are  also jars of stewed apple which if potted in the same manner as jam, hot jam into hot jars, keeps very well. At the weekend I made Apple Butter which is delicious. To make to you need: 2.5lbs sweet apples.  8 ozs honey. juice of half a lemon. 1 tsp cinnamon. half a teaspoon ground cloves.

Put unpeeled but chopped apples in a large pan and barely cover with water. Bring to the boil and simmer gently until apples are soft and mushy. Puree by rubbing through a fine sieve. Return pulp to pan, add honey, spices, lemon juice and honey. Simmer gently stirring frequently to prevent sticking, until mixture is thick. Pour whilst still hot into hot jars. Delicious on toast, porridge or in yogurt. Calories per ounce about 25, calories per ounce of jam about 80.
