Healthy Muffins.

Got the recipe for these muffins last year from an American woman. She was given the recipe as a cholesterol lowering treat.

Peppers Oatmeal Health Muffins:

10ozs Oatmeal(flakes).     1 tbsp baking powder. 2 ozs roughly chopped walnuts. 2 ozs dark brown muscavado sugar.

Handful dried cranberries (any dried fruit will do, I used raisins.)  2 egg whites ( I used Orgran egg replacer). 2 tbsps sunflower oil.

350ml skimmed milk or soya milk. 2 ripe bananas (mashed well).

Put oatmeal into a large bowl and sieve in baking powder, mix well. Add nuts, sugar and dried fruit. Beat egg whites (or make up the egg substite with water, instructions on pack), add oil and milk. Make a well in the centre of dried ingredients and pour in the liquid. Mix well to a dropping consistency, then add mashed bananas. Spoon into muffin cases and bake at gas mark 4 (180c) for about 30 minutes.

This mix makes 12 muffins. They keep well for several days in a tin. Enjoy.
