Winter Market.

Busy, busy, busy. Spent most of the day getting ready for the Winter Market at the Dock in Carrick-on-Shannon which is on tomorrow evening, December 17th from 5-9 and on Saturday 18th from 12-5. Have made lots of jams, all from our own fruits which we freeze in Summer and then make the preserves in the quiter Autumn and Winter days.

Caramel Slices.

I have made a few trays of Caramel Slices which are always popular. They are a delicious combo of shortbread base and fudgy centre with a topping of chocolate.

Almond tarts.

Another fave is Almond Tarts. They have a shortcrust pastry base, a spoon of strawberry jam in the centre and topped with frangipane and sliced almonds. Tomorrow morning I will do a little more baking, don’t know what yet .

       Hopefully the weather will not be too bad overnight. I will cry if I wake up tomorrow and we are snowed in. Fingers crossed that won’t happen.

           The Fair promises to be a great day out with something for all. There are lots of local arts, crafts and foodie stalls to be perused. It is great to support local enterprise especially in the current hard economic times so come along and check it out.

         There is live music on both days. On Friday evening Gian Costello will perform his magical Celtic Fairy songs and on Saturday The Oilskins from Portland, Oregon will be playing Old-Time American folk plus a few other performers too.
